RJ's 3-Rivers Cajun Pasta Recipe

I first experienced this when I was in California in the early 90’s. A local restaurant near my work made this right in front of me and the chef even gave me some of the spice rub so I could make it at home. You can use any pasta you choose; we usually use fresh linguini. This makes one serving.

Ingredients:
2 tbl. Olive Oil

1 tsp. RJ's 3-Rivers Spicy Cajun Blend (Seasoning)

½ cup Chicken Breast-Sliced Thin

¼ cup Andouille Sausage-Sliced Thin (use any smoked sausage you like)

½ cup White Wine

½ cup Heavy Cream

½ tsp. Fresh Garlic

¼ cup of Fresh Shaved Parmesan Cheese

 

Preparation:
Cut your chicken and sausage thinly across the grain and set aside. Crush your garlic cloves and set aside. Heat a 10” skillet on medium high heat. Put your pasta into your pot per the package’s directions. Fresh pasta just takes a few minutes.

Cook:

Put olive oil in the pan and when it begins to smoke, add your sliced sausage. When it starts to turn color, add your chicken. Stir until lightly browned. Next add your 3 Rivers Cajun Seasoning and stir. Add your garlic and stir for 30 seconds. (At this point you can add chopped red and green peppers if you like). Add the wine and cook down to burn off all the alcohol. When mostly gone, add your heavy cream and bring to a slow boil. Add your pasta, stir and then add your parmesan cheese. Stir until cheese has melted and serve in a bowl. Garnish with Grated Parmesan cheese, and fresh Basil or Parsley.
