RJ's 3-Rivers BBQ Chicken Wings

This is my family’s weekend favorite! It’s simple, short cook time and although Chicken is expensive right now, you can feed a lot of people on a budget. I usually try to cook whole “Jumbo” wings, as they tend to smoke well and have plenty of meat on them.

Wood:
I like Hickory, especially on a hot, fast cook.

 

Temp:

375° for the entire cook

 

Rub:

RJ's 3-Rivers BBQ Sweet & Mild Chicken Rub

Cook:

When your smoker reaches the correct temperature, put the wings in the smoker, skin side down and close the lid. In 30 minutes turn the wings over, skin side up. You may want to sprinkle a little more rub for a bolder flavor. After 30 minutes start checking your wings. They will be done, but you may need to go a little longer depending on the size of the wings. Take off the smoker. I like to rest mine on a wire rack for at least 10 minutes (they’re too hot to eat anyway), but this allows the skin to crisp up – almost like they had been deep fried.

Glaze:

We usually eat them as is, no sauce, just a great crispy and spicy wing. If you want to sauce them, place them in a bowl right off the grill and toss with your favorite sauce.
