This is one of our weekly dinners. It’s easy, takes a short time to cook, and tastes great. This is a reverse sear process, so have your sear station ready to go when you take it off your smoker. You can also just grill it and then your good to go in 30 minutes or so.

Wood:

I like Hickory, but Apple works well also.

Temp:

225° for the entire cook

Binder:
Olive Oil

Rub:

RJ's 3-Rivers BBQ Sweet Heat Pork Rub, SPG All Purpose Rub and even the Sweet Heat Chicken Rub works well

Trimming:
Remove any silver skin for the rub to adhere

Cook:

Put in smoker and close the lid for about 1-hour or until it reaches about 130°.  When you hit the mark, pull your tenderloin off the smoker, and place it on a very hot grill. Roll the tenderloin until all sides are fully seared. The temperature should be between 150° and 160°. Take off grill and loosely cover, rest for at least 15 minutes.

Glaze:
Use your favorite sauce or try RJ's 3-Rivers BBQ Original BBQ Sauce or Peach BBQ Sauce!

Another great sauce is the Traeger Apricot BBQ Sauce!
